Grilled flatbread with peaches, Brie, BBQ sauce, and herbs. Ideal for summer entertaining or casual vegetarian meals.

# What You’ll Need:

→ Flatbread Base

01 - 2 large flatbreads (store-bought or homemade naan, or pizza crust)

→ Toppings

02 - 2 medium ripe peaches, pitted and sliced
03 - 6 ounces Brie cheese, sliced
04 - 1/2 small red onion, thinly sliced
05 - 1/3 cup BBQ sauce
06 - 1 tablespoon olive oil
07 - 1/4 cup fresh basil leaves, torn
08 - 1/4 cup arugula (optional)
09 - Freshly ground black pepper, to taste

→ Garnish (optional)

10 - 2 tablespoons honey
11 - 1 tablespoon toasted pine nuts

# How-To Steps:

01 - Heat grill to medium-high, approximately 400°F.
02 - Brush peach slices with olive oil. Grill peaches for 1–2 minutes per side, until grill marks are visible and peaches are softened. Remove from grill and set aside.
03 - Lightly brush both sides of the flatbreads with olive oil.
04 - Place flatbreads on the grill for 1–2 minutes per side to heat and crisp. Remove from grill.
05 - Distribute BBQ sauce evenly over each flatbread surface.
06 - Arrange grilled peach slices, Brie cheese, and red onion evenly over flatbreads.
07 - Return assembled flatbreads to grill. Close lid and cook 3–4 minutes until cheese melts and edges are crisp.
08 - Remove flatbreads and let rest for 1 minute. Top with basil, arugula, honey, and pine nuts as desired. Season with black pepper.
09 - Slice flatbreads and serve immediately.

# Expert Tips:

01 -
  • The grilled peaches add a summery sweetness that feels like a secret ingredient.
  • The combo of melty Brie, smoky BBQ sauce, and fresh basil hits that perfect balance of savory and fresh every time.
02 -
  • Rushing the peaches will leave them raw and flavorless—give them their time for the grill marks and softening.
  • I learned the hard way that Brie gets messy fast; chill it before slicing for cleaner rounds and less sticking.
03 -
  • Don&apost overcrowd the grill—space means the peaches caramelize, not steam.
  • The honey drizzle after grilling locks in a gorgeous shine and subtle sweetness.
